Just outside the city of La Fortuna near Volcano Arenal in Costa Rica is a place called Rancho Margot. The tourist ranch and farm is completely sustainable and self-sufficient with a focus to protect and reforest the surroounding area. You have to see the various way the create energy and reuse resources to believe them.
